Cauliflower is one of the most common and popular vegetables known to us for ages and it is a part of the staple diet of most of us all year round. The cozy Cauliflower (gobi) is cool white in colour and its green leafy appearance surrounding it like a throne is pleasing to the eyes. Yet we do expect the leaves not to be included in the weight of the flower when we go shopping at our local vegetable markets!
To me Gobi aloo ki subzi, tadke wale flower ka saalan, cauliflower in cheesy white sauce, Gobi mussallam, aloo Gobi ki tehari, phool Gobi ka keema, Gobi ke paranthey, Gobi ke pakode, Gobi ka achaar and Gobi masala fry with dal-rice and papad have all been favourites since a long time now.
Though we have a variety of dishes being made with cauliflower, with the advancement of international cuisines its forms have been changed from doing a potage Dubarry in French kitchens referring to a cauliflower soup to a roasted cauliflower dip. Even cauliflower rice is now popular under vegan cooking.

Checking for worms is always a tip of advice when we speak of cauliflower and we all take care of it in many ways – from careful visual check in between the florets to rinsing it well and soaking in salted or water with a few drops of white vinegar in it.
It is one veggie that is easy to cook and doesn’t take much time. Neither is it too fussy in being gelling up into the masala and spice blends or recipes.
