Paneer or cottage cheese as we know best know it as is one of those special category ingredients in our kitchen which has a lot of popularity and a great fan following as well around the country with a number of recipes which can be made using it. Paneer can be used and prepared for dishes to enjoy throughout the day, be it a stuffed paneer paratha with a bowl of curd to start the day, kadai paneer, matar paneer, shahi paneer, palak paneer, methi paneer, malai kofta using paneer and the list goes on!

Paneer has also been used in a number of ways with rice as well. One of my all-time favorites is the dum wala paneer tikka biryani which is just out of this world, nice tandoori marination, cooked in the oven or tandoor with cubes of onions, capsicums, tomatoes and layered with an aromatic and creamy makhani gravy, cooked rice, added flavor from the golden fried sliced onions, rose water, fried nuts, mint- coriander leaves, saffron milk solution and then a dum effect!

Besides paneer pakoda, paneer grilled sandwich, masala paneer dosa, paneer stuffed samosas we also have the chenna fresh home-made cottage cheese being used in some of our Bengali sweets namely the Rossogulla, Sandesh, etc. a delectable humble and neutral ingredient which is able to adapt to various cooking styles, spices, sweetness for mithai and desserts and much more.
